Our Zairai Matcha offers a refreshing aroma with a rich, full-bodied, earthy character.
The tea trees are grown from naturally pollinated seeds that have been passed down for generations in the Yubune district of Wazuka, Kyoto. Because these trees are seed-grown rather than propagated from cuttings, each one carries its own unique genetic identity, creating a flavor profile that is truly unique to this region. This natural diversity gives rise to a layered, nuanced matcha that reflects the land it comes from.
Today, most tea gardens are planted with cloned cultivars that produce uniform characteristics. In contrast, Zairai tea gardens preserve the rich genetic diversity that has evolved naturally over centuries.
Zairai Matcha is a rare, living genetic archive—an authentic expression of Yubune's terroir that cannot be replicated anywhere else.
How to Brew
Koicha: Sift 4g of matcha into your bowl. Gently add 15 to 30ml of hot water and whisk in circular motions until smooth and clump-free, forming a thick paste. Enjoy!
Usucha: Sift 2g of matcha into your bowl. Gently add 90ml of hot water and whisk in a “W” motion until you achieve a creamy consistency and a fine foam appears. Enjoy!
Latte: Sift 4 to 6g of matcha into your bowl. Add 30ml of water and whisk in circular motions until smooth and clump-free, forming a thick paste. Gently add 20ml of hot water and whisk in a “W” motion until you achieve a creamy consistency and a fine foam appears.
To finish, lightly glide your whisk across the surface to smooth the texture and break large bubbles, then lift it gently from the center.
For an iced latte, pour 100ml of your desired milk into a glass with ice. For a hot latte, steam 100ml of your desired milk into a mug.
Pour your prepared matcha over your milk, mix, and enjoy!
How to Store
