Registered as an official cultivar inn 1971, sayamakaori is native to Saitama Prefecture. This cultivar is cultivated from the kaorisayama and yabukita tea cultivars.
As sayamakaori contains higher levels of catechins, the flavour profile of this matcha is slightly more astringent.
