Matcha Carbonara
The recipe is made by Sora N., d:matcha's Confectionery Assistant
Ingredients:
- Pasta: 1 serving
- Soy milk: 100g
- Egg yolks: 2
- Matcha: 3 teaspoons
- Bonito flakes: 2g
- Bacon
- Garlic
Preparation: Boil water for the pasta. Use about 2 liters of water with a heaping tablespoon of salt.
Steps:
- Chop the garlic and bacon
- Bacon: Cut into 1 cm slices
- Garlic: Mince
- Warm the soy milk in the microwave and dissolve the matcha in it
- Ideally, around 60°C. Sift the matcha when adding.

Warm the bonito flakes in the microwave and crush them into powder by hand
Add them to the soy milk mixture along with the egg yolks and mix well. - Boil the pasta when all ingredients are ready
- Cook the pasta for one minute less than the time stated on the package. Reserve a bit of the pasta cooking water.
- Sauté the garlic and bacon until crispy, then add about 3 tablespoons of the reserved pasta water and let it blend in slightly

Turn off the heat and add the soy milk mixture and cooked pasta to the pan
Mix constantly until the sauce is well coated on the pasta. - Finish with a light sprinkle of salt and pepper, and top with cheese if desired. Serve and enjoy!
